COOKING: Follow these easy steps to prepare finger-licking jollof rice

If you have ever watched a Nigerian movie, then the jollof rice delicacy popular in West Africa isn’t a new to you.

  • Two cups of rice (depends on the number of people you’re preparing for)
  • 2 Red bell pepper
  • Tomato paste
  • Tomatoes
  • 5 onions
  • 4 pieces of garlic
  • Ginger
  • 1 table spoon of curry powder
  • 3 Bay leaves
  • 1 table spoon of Thyme
  • Chicken or meat sauce

Preparation:

Step 1: Soak the rice in water, slice onions and keep them aside; then slice red bell pepper and tomatoes.

Step 2:  Put in the sliced red bell pepper and tomatoes in a blender and blend then pour in a saucepan to cook and then keep it aside.  Make sure it is not so dry.

Step 3: Get another saucepan and heat it up, pour in the oil and add the chopped onions, garlic and ginger. When ready, add it to the cooked tomato mixture.

Step 4: Scoop half the tomato paste and mix it with either meat or chicken depending on what is available. In the saucepan, add the spices, one tablespoon of curry powder, three Bay leaves, one tablespoon of thyme and stir.

Step 4: Scoop some of the mixture in a bowl, add rice in the saucepan and mix. Then add meat or chicken and leave it to boil. Add some butter or margarine and let it boil.

Step 5: Cover the saucepan and let it cook for about 45 minutes. After 30 minutes, check if rice is sauce-logged. Remove the lid to cook off the excess sauce. If the rice seems dry, stir in 1 to 2 cups water to allow the rice at the bottom of the saucepan to char a bit to infuse it with a smoky flavour.
