Some cocktails are remembered for their ingredients. Others become part of a culture. The Paloma belongs to the latter.
A simple combination of tequila, grapefruit, citrus, sweetness and sparkling refreshment, the Paloma has become one of the world’s most beloved tequila cocktails. In Uganda, where cocktail culture continues to evolve alongside a growing appreciation for premium spirits, the drink offers an easy introduction to the versatility of tequila.
Steven Baguma, a Reserve Brand Ambassador at Uganda Breweries Ltd says Paloma is one of the original cocktails on which modern ones are based or inspired.
“It’s the balance and also these classics came into play at the beginning of the cocktail renaissance,” says Baguma.
Interestingly, the Paloma gets two occasions to take centre stage.
Traditionally celebrated on May 22, World Paloma Day is also marked on September 21, giving the cocktail another reason to be raised around the world. The September date carries a symbolic connection: it coincides with the International Day of Peace, whose most recognisable symbol is the white dove. Paloma, the Spanish word for dove, therefore gives the tequila cocktail an unexpected connection to a day dedicated to peace.
It is a fitting association for a drink that has long been celebrated for its refreshing, easy-going character.
The origins of the Paloma are less definitive than its popularity. Unlike cocktails with a clearly documented inventor or birthplace, the drink’s early history is surrounded by competing accounts. One of the most commonly repeated stories credits Mexican bartender Don Javier Delgado Corona of La Capilla in Tequila, Jalisco, although the attribution is disputed. What is clearer is that the Paloma emerged from Mexico’s long relationship with tequila and grapefruit-flavoured refreshments before becoming an international bar staple.
Its enduring appeal lies partly in its simplicity. Tequila provides the foundation, while grapefruit brings bitterness and citrus brightness. Carbonation lifts the drink, creating something that can be enjoyed slowly or easily shared in a social setting.
For a premium expression such as Don Julio, the Paloma also becomes a way of appreciating tequila beyond the traditional shot or Margarita.
Don Julio Blanco makes the best classic paloma because its unaged, crisp flavor profile features fresh citrus and sweet agave notes that cut cleanly through tart grapefruit.
“It offers bright notes of crisp citrus, fresh-cut grass, and natural agave sweetness. It also provides a clean finish with a touch of black pepper that shines through bitter grapefruit soda or juice without getting lost,” says Baguma.
Don Julio has increasingly found space in Uganda’s premium social scene, where cocktails are becoming part of the experience rather than simply something ordered at the bar. This year’s September 21 celebration adds another layer to the occasion. Beyond being another date on the cocktail calendar, it gives the Paloma a playful connection to an idea much bigger than the glass itself.
A white dove has long represented peace. A paloma means white dove. And tequila’s most famous grapefruit cocktail gets another day to celebrate.
So, on September 21, the ritual is simple: pour, mix, garnish and raise a glass, this time, perhaps, to good company, good cocktails and a little more peace.
